parsley, minced (we use parsley)<\/p>\n<p>2 tablespoons fresh lemon juice<\/p>\n<p>1 cup crumbled Feta (approx. 4 ounces)<\/p>\n<p>Salt &amp; Pepper<\/p>\n<p>1 tablespoon of oil<\/p>\n<p>Heat oil in skillet over medium-high heat.\u00a0 Pat dry the chickpeas and add to skillet.\u00a0 Cook them until slightly crispy, about 3-5 minutes.\u00a0 Stir in the tomatoes, parsley, lemon juice, 1\/2 t salt
